Hello! My name is Amanda Holben and I am a Registered and Licensed Dietitian Nutritionist who owns Fork In The Road Nutrition Counseling, LLC. I graduated Summa Cum Laude from Colorado State University with a Bachelor of Science degree in Nutrition & Food Science. After that, I graduated Summa Cum Laude from Arizona State University with a Master of Science in Human Nutrition, where I also completed my Dietetic Internship back in 2002. 

I began my professional career at Remuda Ranch Programs for Eating Disorders (2002 – 2008) where I served as both a floor dietitian as well as the Nutrition Services Clinical Manager. I then joined the Eating Disorder Assessment and Support Team at The University of Texas at Austin (2008-2011). For the next five years (2011-2016), I worked in private practice at The Healthy Weigh in Houston, TX where I was the lead dietitian for the program. I transitioned to my own full-time private practice at Fork In The Road Nutrition Counseling, LLC in 2016.  In addition to private practice, I also provide contract services for wellness & rehabilitation programs in the greater Houston area.


As part of my commitment to excellent care, I actively collaborate care with treatment providers and am often requested to provide supervision on difficult cases. I trained with Evelyn Tribole and Elyse Resch (authors of Intuitive Eating) to earn my credential as a Certified Intuitive Eating Counselor. I am an active member of Houston Eating Disorders Specialists (HEDS) and have served on the Executive Committee as the Education Committee Chairperson and Conference Chair. As a Christian, I cherish the opportunity to integrate faith into the nutrition recovery process, but only at clients’ request. I live in Manvel, TX with my husband, daughter, and our rescue mutt.  I consider it an honor and a privilege to collaborate with clients as they pursue their nutritional health goals.
